Gary, you abuse the term 'guess' almost as badly as you abuse the term 'learn'. Viral "reassortment" is no more a matter of guessing than the particular set of top faces in a dice roll. Yahtzee is not a guessing game. Neither is chemistry. Molecules don't learn in any standard sense of the term. Least of all can they be said to learn in conjunction with your claim that they already know everything 'necessary' to begin with.
