Ok, the bible tells us that Noah was tasked with preserving 2 of every kind of animal that was considered “unclean” and 7 for every type of “clean” animal. Given all the species of animals that’s quite a big number of animals living in that Ark. What do you think Noah and his family did with all that excrement? I don’t think they burned it since the Ark itself was made of wood and that could have set the whole ship ablaze.
Animal diapers perhaps?
I've been presented this question by several evolutionists and have never been able to provide a plausible solution to this problem

There is always an answer to be found in the Holy Scriptures.
This verse suggests that the excrements might have been burned. How did the ark not burst aflame? Perhaps the rain prevented the fire to spread, since the wood was presumably water-logged.
1 Kings 14:10
"Because of this, I am going to bring disaster on the house of Jeroboam. I will cut off from Jeroboam every last male in Israel—slave or free. I will burn up the house of Jeroboam as one burns dung, until it is all gone."
OR they might have used a litter box system as evidence by this revealing verse:
"As part of your equipment have something to dig with, and when you relieve yourself, dig a hole and cover up your excrement."
OR it might have been recycled to cook some food for the human or animal occupants:
"Eat the food as you would a barley cake; bake it in the sight of the people, using human excrement for fuel."
Well, at least the excrement from the pair of cows:
"Very well," he said, "I will let you bake your bread over cow manure instead of human excrement."

Does the Bible say anything about animal diapers?

I quite believe that animal diapers are not mentioned. But if you read my post above, you would realize that they would not be necessary. Diapers would only work if the ark had subtantial laundering facilities, and there is no mention of God asking Noah to include a coin-operated laundromat.
The closest I could find is this:
"But the commander replied, "Was it only to your master and you that my master sent me to say these things, and not to the men sitting on the wall—who, like you, will have to eat their own filth and drink their own urine?"

I think you are wrong. The bible does mention pampers.
21 If a man pampers his servant from youth,
he will bring grief [a] in the end.
maybe the same idea was used on the animals in the Ark. I find it hard to believe 8 people could perform clean-up duty on all that crap
