But I’d be curious to know why atheists are attracted to science fiction (not necessarily with happy results, by any means), and why there is so little good science fiction out there from a theistic perspective. Any thoughts?

The Genesis book of the Bible qualifies quite nicely.

Exodus fits that mold too.  Cthulhu's slaves have been stolen by Pharoah.  He wants them freed to serve him.  He rains multiple terrors upon Egypt to persuade Pharaoh to release them.  Pharaoh breaks under the pressure and decides to release Cthulhu's slaves.  Cthulhu hardens Pharaoh's heart to make him keep them.  Finally, at midnight Cthulhu himself strikes down all the firstborn in Egypt, from the firstborn of Pharaoh, who sits on the throne, to the firstborn of the prisoner, who is in the dungeon, and the firstborn of all the livestock as well. Pharaoh and all his officials and all the Egyptians get up during the night, and there is loud wailing in Egypt, for there is not a house without someone dead.  Pharaoh releases the slaves and Cthulhu exiles them in the desert for 40 years until every single one of them is dead before he finally allows their children to enter the promised land and slaughter all of it's inhabitants in Cthulhu's name.  Amen.

The whole Bible makes more sense if you do a search and replace on "The Lord" and "Cthulhu".
